Using a food processor, turn the cashews into powder.

Add the spice mixture, ginger, coconut, chili, dash of salt, tomato paste, 3 Tbsp. of coconut milk, and 4 Tbsp. of water. Turn it into a fine paste.

Thoroughly coat all of the chicken with the paste and let it stand in the refrigerator for 4 hours.

Using a large sauté pan on medium heat, add the oil and allow it to heat up.

Placed the chicken into the pan and brown it gently for 4 minutes on each side.

Discard the excess oil and reduce the heat to a medium-low heat.
